Macarons were a key focus at this week’s Europain trade fair in Paris but they are now also taking London by storm. Iconic French patissier-chocolatier Pierre Herme has opened a shop in Selfridges before the opening of his dedicated boutique later this spring.
Herme is credited with expanding the horizons of macaroon making over the last 25 years, introducing flavourings like rose and pistachio, which are now considered classic macaroon taste options. The brightly coloured mini-meringues are very different to the British baked macaroons.
Herme, who in addition to Paris also has a high-street presence in Tokyo, said he was thrilled to open a shop in London. “It has always been a dream of mine to open in London. Many of our devotees in Paris are from the UK,” he says.
